On 3/31/90, Ross Shigeoka and his wife, Joanne, opened a 585 sq ft saimin stand named Shige's Saimin Stand, using part of his last name. This was next to an old-time Wahiawa okazuya lunch shop. When the okazuya closed a few years later, Ross took over that space, doubling the kitchen and dining area, which continues today.
